Red Wine Facts
Dr. Ram Seetharam , Independent Consultant
Is it true that red wine consumption is actually healthful? Is the "French Paradox" true? There is a growing body of evidence is in that moderate consumption of red wine actually benefits one's health. Grape skins, stems and seeds contain a variety of phenolics, saponins and tannins which are extracted into the wine during the fermentation process. Some of these molecules act as potent anti-oxidants and are thought to confer several health benefits. The best known wine-derived phenolic is resveratrol, which has been shown to prevent and/or ameliorate heart disease, digestive problems, certain types of lung diseases and inflammation. It may also be involved in increasing life-expectancy. The benefits of red wine consumption and the use of spectroscopy in the analysis of wine and corks will be presented.
Ramnath (Ram) Seetharam
Bio: Dr. Ram Seetharam has been an independent consultant for the past 3 years in the technical and regulatory areas of Pharmaceutical Development. His consulting assignments have included Process Development/Validation, Analytical Characterization, Stability Testing and Formulations Development. Ram obtained his Ph.D. in Biochemistry from IISc in Bangalore, India and did his post-doctoral work on the protein chemistry of Hemoglobin at The Rockefeller University with Drs A.S. Acharya and J.M. Manning in Nobel Laureate Dr. Stanford Moore's laboratory. He was also involved in a collaborative program on peptide synthesis with Dr. Shabbir Khan in Nobel Laureate Dr. Bruce Merrifield's laboratory at The Rockefeller University. He worked for 8 years in the R&D Departments of Monsanto, DuPont and DuPont Merck Pharmaceuticals, followed by seven years setting up state-of the-art analytical laboratories at two different Contract Testing Organizations i.e., BioReliance and ViroMed.

(GW Bridge-use Route 4 West)
Take 4 West to 208 North to merge with I-287. Follow I-287 South from New York Thruway or Westchester use Exit 15 off the Thruway and follow I-287 South. Take Exit 55, Wanaque. Via Route I-287 North:
Take Exit 55, Wanaque. Turn right at bottom of exit on 511 North, Ringwood Avenue. Follow Ringwood 2 1/2 miles to Belmont Avenue/Berta Place (Just past Il Palazzo Pizzeria) and turn right. Go to end and turn left on Mullen. Go one block and turn right on Prospect. Go one block to end. You are facing the restaurant's driveway.

A. Take 46 east or west to 23 North and follow directions below.
B. Take 80 West to 23 North, continue below

From Route 23 North to Restaurant (about 15 minutes):
Take 23 North eight (8) traffic lights. Just past eighth light take I-287 North, direction Mahwah. Follow about 2 miles to Exit 55, Wanaque. At bottom of exit turn right on Ringwood Avenue/511 North. Go 2 1/2 miles and turn right on Belmont Avenue/Berta Place and turn right (hint: turn just past huge pizzeria, "Il Palazzo"). Go to end and turn left on Mullen. Go one block and turn right on Prospect. Go to end of block and you are facing restaurant's driveway.
From Route 23 South:
Take 23 South to I-287 entrance in Riverdale, follow signs for I-287 North, direction Mahwah. Follow about 2 miles to Exit 55, turn right at bottom of exit onto 511 North/Ringwood Avenue. Go 2 1/2 miles to Belmont Avenue/Berta Place. Turn right. Go to end of block and turn left on Mullen. Go one block and turn right on Prospect. Go one block to end.
